Rae’s Favorite Oatmeal Coconut Cookies
Ingredients
- 1/4 cup of margarine
- 1/2 cup butter
- 1 1/2 cup shredded coconut
- 1 1/2 cups of all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup packed light brown sugar
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 2 cups of rolled oats
- 2 eggs
- 1 1/2 cup rasins
Preheat the overn to 350 degrees. Mix up the flour, baking soda, salt and baking powder and set that bowl aside. Beat the butter, margarine, brown sugar and sugar until its light and fluffy.
Add the vanilla and the eggs to the butter mixture and beat it until it is smooth. Stir in your flour until it is well blended.
Stir in the oats, rasins, and coconut. Scoop out the dough into rounded teaspoons and spread them out about 2 inches apart on a baking sheet.
Use a folk to slightly squish the cookies. Bake’em for about 10 minutes until they are lightly brown and then cool them on your cooling rack.
